Waffle Sundaes with Hot Fudge and Peanut Butter Sauce

One of my memory from my childhood that I have always remembered is a time when I was probably about 11 years old and one of my church leaders "kidnapped" me and the other girls in my church group, with prior permission from our parents of course, and brought us all to our house for a fun breakfast party. One of the things that I remember very clearly is what we ate. We had waffles for breakfast but instead of regular waffles with syrup we had waffle sundaes. I guess the reason the memory stands out to me is, how often as a kid did you get to eat ice cream for breakfast? It was pretty awesome.



I think waffle sundaes would be a really fun breakfast for a special occasion, like a birthday, or maybe after a sleepover with friends or cousins, or something like that. It would also make a great dessert. You can set it up like a dessert bar where people can make their own, just provide waffles, ice cream, and all kinds of toppings.


I knew my family would love it so I decided to make some. I ran to Walmart and picked up a couple of boxes of Kellogg's® Eggo Thick & Fluffy Original and Double Chocolatey Waffles along with some ice cream and toppings. I thought the Eggo Double Chocolatey Waffles would be really good with the ice cream  but I wanted to give people options so I got the Eggo Original Waffles with Madagascar Vanilla as well. By getting the Eggo Thick & Fluffy waffles I got a yummy Belgian Style Waffle that was quick and simple to prepare. The Eggo Thick and Fluffy Double Chocolatey Waffles are a new flavor and are really yummy and indulgent, perfect for a waffle dessert, almost like a brownie sundae but with waffles. 


I made a couple of homemade ice cream sauces to go along with my waffle dessert bar, some hot fudge, and some peanut butter sauce. My family all love chocolate and peanut butter so we thought it would be the perfect flavor combination furor sundaes (the recipes for both sauces are below). I made them ahead of time and then when we were ready for our waffle bar I just heated them up and added vanilla ice cream and several other toppings.


We used raspberries (thawed, frozen berries), whipped cream, and sprinkles. You could also add strawberries, maraschino cherries, chopped nuts, or anything else you like on an ice cream sundae.


Homemade Peanut Butter Sauce for Ice Cream

Ingredients:

  • 1- 14 oz. can sweetened condensed milk
  • 1/2 cup of creamy peanut butter
  • 1/2 stick of butter (1/4 cup)
  • 1 tsp vanilla
  • dash of salt

Instructions:

In a medium saucepan, add the sweetened condensed milk, peanut butter, and butter. Heat over medium-low heat, stirring constantly until the sauce is smooth and slightly thickened. Remove from heat and add vanilla. Add a dash of salt if needed (depending on the saltiness of your butter and peanut butter this may not be necessary so taste a little bit first to determine if an extra pinch of salt is needed). Put in a jar or other airtight container to store. Store in fridge and reheat to thin before serving.

Makes about 1 pint of sauce.

Homemade Hot Fudge Sauce


Ingredients:

  • 1/2 cup of cocoa
  • 3 T oil
  • 1- 12 oz. can evaporated milk
  • 2 cups sugar
  • 1 stick of butter (1/2 cup)
  • 1 tsp vanilla

Instructions:

In a medium saucepan combine the cocoa and oil and stir until smooth (it should resemble melted chocolate). Add evaporated milk, sugar, and butter. Bring to a boil over medium heat, and boil for 8 minutes, stirring constantly. Remove from heat and add vanilla. Pour into jars or other containers and store in the fridge, reheating when ready to serve. 

Makes about 1 1/2 pints of sauce.
